Answers To Diet Questions

I worked in ALL INDIA INSTITUTE OF MEDICAL SCIENCES for 12 yrs as Clincial Dietition. I did additional course work and Internship from Univ of Wisconsin at Madison. Currently I work at Redmond Regional Hospital in Rome, GA as Registered and Licencesed Dietition.

Que: Please advise regarding an Indian diet that is gluten free. Looking for specific diet choices that may not be obvious sources of gluten yet are not recommended. Thank you!

Ans: Hi Jodi,
Gluten free diet is advised for people who have celiac disease and cannot tolerate gluten -which is a component of a protein found in some grains. The foods to be avoided are the following grains and all products made out of them
Wheat, Barley, Triticale and Oats. Oats per se do not contain gluten but it is difficult to find oats which are not contaminated with wheat and it is best to avoid oats.
Rice and Corn are perfectly acceptable but rice or corn flakes could have contamination from wheat.
The hidden sources of gluten are all products which use starch as thickener-including sauces, gravies, canned soups, all precooked meals, all ready to eat meals and fast food etc. Malt vinegar is not gluten free.
Read all food labels very carefully. If you are unsure about the product-avoid it till you can confirm its ingredients. Call the 1-800 number listed on the food label, or go to their web site and you should be able to find the information. Do check the ingredient with the manufacturer from time to time because they may change ingredients at any time.
Check your medicines too with the manufacturers and not just the pharmacist to make sure they are gluten free.
My recommendation is to start cooking from scratch and use the items you know are wheat free.

Que: I am 30 yrs. old. Recently I joined work as a school teacher. I have to get up 5.00 AM everyday. I am very busy through out the day. Diet is not proper. I bacome tired as day goes on. What type of diet would you suggest?

Ans: Hi Prachi,
You are encountering a problem most working women face.
You must learn to plan your meals in advance. A good time is the weekend. Buy enough food to last you for the week. Bag individual servings of food and refrigerate them to be used during the week.
Never leave without breakfast. It could be a glass of milk and a banana, or half a bagel, a slice of toast, ceral or even a breakfast bar to eat on your commute to work.
Pack a brown bag lunch the night before-it could be leftover food from dinner or a sandwich made with deli meats or veggies and cheese. Do carry snacks with you. The small packets of carrots or raisins, cheese sticks/slices, small packs of yogurt make excellent snacks which do not take much time to eat. Try to eat 3 meals a day with 1-2 small snacks inbetween.
Do make time for yourself. Everybody can take out 5 mins 3 times a day to eat. It will keep you healthy in the long run.
